Espresso Martini Ice Cream Sandwiches
A delicious and awesome ice cream sandwich with coffee flavored ice cream sandwiched between two chocolate cookies.
Ingredients
Ice Cream
- 1 cup sweetened condensed milk
- 1 1/4 cups double cream
- 1/2 cup coffee liqueur
- 1/2 cup whole milk
- 1/4 cup espresso
- 1 tspn vanilla extract
- 1/4 tspn sea salt
Cookies
- 2 cups flour
- 1/4 cup cocoa powder
- 1/4 cup espresso powder
- 5 g baking soda
- 3 g sea salt
- 1 cup unsalted butter room temperature
- 100 g golden caster sugar
- 1 cup light brown sugar
- 2 large eggs
- 1 tspn vanilla extract
- 1 cup dark chocolate chips
- 1 cup white chocolate chips
Instructions

Ice cream: combine all ice cream ingredients in a bowl and mix well.

Pour into a baking dish and freeze.

In another bowl, combine flour, cocoa, espresso powder, baking soda and salt.

Use a hand mixer to whip the butter and sugars until fluffy.

Add the eggs to the butter mixture one at a time. The add the vanilla.

Reduce speed to low and slowly add the flour mixture.

Add chocolate chips.

Chill the dough for 1 hour in the fridge.

Preheat oven to 350℉ and line a baking sheet with parchment.

Spread the cookie dough over the parchment.

Bake for 15-20 mins or until edges are firm and the center is still soft.

Cool for 10 mins. Using a 3-inch round cutter, cut out perfect circles. Cool completely.

Scoop ice cream and sandwich in between 2 cookies.

Freeze for at least 1 hour.
