Soba and Mushrooms in Soy Broth
An easy, light and delicious hot soba noodle recipe with your favorite mushrooms
- 6 cups Water
- 1 Garlic Clove Sliced
- 1 tbsp Ginger Sliced
- 1/2 cup Soy Sauce
- 1/4 cup Wakame Re-hydrated if dried
- 1 tbsn Vegetable Oil
- 2 cups Maitake Mushrooms Use your favorite mushroom
- Ground Black Pepper
- Soba Noodles Cooked
In a large pot, add in the water, garlic and ginger and simmer for 10 minutes. Add in the soy sauce and wakame and simmer for 5 more minutes and remove from heat.
Add the vegetable oil to a pan and heat on medium high. Add the mushrooms, salt and pepper to taste. Cook for 10 - 12 minutes.
Heat the soy broth to serving temperature. Serve soba noodles in the soy broth topped with the mushrooms. Add sliced or grated turnips and/or egg yolk (if you dare) to top.
