A Simple Pesto Recipe with the Complex Flavors of Thailand

Thai Basil Peanut Pesto

Ingredients

  • 2 cups Thai Basil It must be Thai basil, as regular basil has a completely different flavor.
  • 1/4 cup Peanuts
  • 4 Garlic Cloves
  • 1 tspn Red Pepper Flakes
  • 3 tbsp Sesame Oil
  • 1 1/2 tbsp Rice Vinegar
  • 1 tbsp Agave Nectar
  • 1 tspn Soy Sauce
  • 1 tbsp Lime Juice

Instructions

  1. In a food processor, add in the Thai basil, peanuts, garlic cloves, red pepper flakes, sesame oil, rice vinegar, agave nectar, soy sauce, and lime juice. Process until all the ingredients are blended well and turned into a paste-like consistency.

  2. Add the pesto to pasta, salads, or any other dish you want to add some 'zing' to. The pesto should be stored in a closed container and can be kept refrigerated for up to a week.
