King Ranch Chicken Casserole
This hearty portion of savory chicken is a meal fit for a royal family!

Ingredients
- 1 large onion chopped
- 1 large green bell pepper chopped
- 2 tbsp vegetable oil
- 2 cups cooked chicken chopped
- 1 can cream of chicken soup undiluted
- 1 can cream of mushroom soup undiluted
- 1 can tomato and green chiles diced
- 1 tsp chili powder
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp freshly ground black pepper
- 12 corn tortillas
- 2 cups cheddar cheese shredded

Sauté the onion and bell pepper in hot oil in a big skillet until it all turns tender. Stir in the chicken and the next 7 ingredients, then take the skillet off the heat.

Tear the tortillas into 1-inch pieces, and layer one-third of them in the bottom of a lightly greased 13- x 9-inch baking dish. Top them with one-third of the chicken mixture and 2/3 cup cheese. Repeat this to make two more layers.

Bake that sucker at 350° for 30 to 35 minutes.
Recipe Notes
If you've got a lot of leftovers, you can stick them in the freezer for up to a month. Just make sure to thaw it in the fridge the night before you plan to eat it, then bake it the same way.
