Ingredients

  • 1 1/2 cup flour
  • 1 tbsp salt
  • 1 tbsp pepper
  • 4 boneless chicken thighs
  • 2 tbsp olive oil
  • 1 lb bacon chopped
  • 1 12oz stout beer
  • 1 lb baby carrots
  • 1 lb chopped mushrooms
  • 1 chopped onion
  • 1 tbsp dried thyme
  • 1 tbsp minced garlic
  • 1 cup chicken broth
  • 2 cups pease

Instructions

  1. Combine 1 cup flour, 1 tbsp salt, 1 tbsp pepper and mix well. Dredge the chicken in the flour mixture.

  2. Heat olive oil in skillet over medium-high heat and cook chicken until browned on both sides. Take off heat and cut in half.

  3. Cook bacon in the skillet with the left over chicken grease. Add 1/2 cup flour and mix well to create a rue. Pour in the beer and stir to make bacon and gravy.

  4. Place the chicken in a slow cooker. Then pour the bacon gravy over the chicken.

  5. Add carrots, mushrooms, onion, thyme, garlic, and chicken broth and cook on high for 4 hours or 7-8 hours on low.

  6. Add the peas and continue cooking for 10 minutes, stirring occasionally. Season with salt and pepper and serve.
