Peanut Chicken Cabbage Wraps
A delicious Southeast Asian influenced appetizer with a slightly sweet and savory taste enhanced with the crispness of the cabbage.
- 1 large Asian pear cored and julienned
- 1 English cucumber julienned
- 1/2 cup cilantro chopped
- 1 tbsp canola oil
- 1 lb chicken thighs skin removed and chopped
- 1 tspn salt
- 1/4 cup peanut sauce
- 1 tbsp rice vinegar
- 1 tbsp lime zest
- napa cabbage leaves
Heat the oil in a skillet over medium-high heat and add the chicken. Season with the salt. When the chicken is done, lower the heat.
In a small bowl, combine the peanut sauce, rice vinegar, and lime zest and mix well. Combine with the chicken and stir.
Top a napa cabbage leaf with the chicken, julienned pear and cucumber, and the cilantro.
