Chicken Adobo

Ingredients

  • 1 tbsp vegetable oil
  • 6 bone-in, skinless chicken thighs
  • 3 cloves garlic minced
  • 2/3 cup apple cider vinegar
  • 1/3 cup soy sauce
  • 1 tsp whole black peppercorns
  • 1 bay leaf

Instructions

  1. Heat the oil in a medium frying pan on medium-high heat. Add the chicken and cook it until it's lightly browned, around 5 minutes. Turn the chicken over and cook it for an additional 5 minutes. Transfer chicken to a plate and put it aside.

  2. Pour all but 1 tbsp. of pan drippings off and return the pan to low heat. Add garlic and sauté for about a minute until it becomes soft. Add all of the remaining ingredients and stir to incorporate. Put the chicken back in the pan and cover it. Let it cook for 20 minutes.

  3. Take the cover off, increase the heat to medium-low and cook for an additional 15 to 20 minutes. Spoon the sauce over the chicken occasionally. It's ready when the sauce has thickened and the chicken is tender and fully glazed. Take the bay leaf off before eating.
