Baked Mac and Cheese Bites
Who doesn't like mac and cheese? This bite-sized version is just perfect for an afternoon snack or as a party appetizer.
Ingredients
- 2 cup uncooked elbow macaroni
- 2 tbsp butter
- 2 tbsp flour
- 1 1/2 cups milk
- 2 cups shredded sharp Cheddar cheese
- 2 oz cream cheese
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 large egg beaten

Preheat the oven to 425°. Follow the directions on the macaroni box to cook it, then drain.

In a big saucepan, melt butter over medium heat. Stir in flour and seasonings until it all turns smooth, then gradually whisk in milk. Bring it to a boil while stirring constantly. Keep cooking and stirring for 1-2 minutes or until thickened. Stir in 1 cup of cheddar cheese and cream cheese until they've melted.

Remove the pan from the heat and stir in eggs. Add the macaroni and toss it to coat. Spoon about 2 tablespoons of the macaroni mixture into prepared mini-muffin cups and sprinkle the remaining cheddar cheese on top.

Bake everything for 8-10 minutes or until they turn golden brown. Let them cool in the pans for 5 minutes before serving.
