Baked Mac and Cheese Bites are the Greatest Snack

Baked Mac and Cheese Bites

Who doesn't like mac and cheese? This bite-sized version is just perfect for an afternoon snack or as a party appetizer.

Ingredients

  • 2 cup uncooked elbow macaroni
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/2 cups milk
  • 2 cups shredded sharp Cheddar cheese
  • 2 oz cream cheese
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 large egg beaten

Instructions

  1. Preheat the oven to 425°. Follow the directions on the macaroni box to cook it, then drain.

  2. In a big saucepan, melt butter over medium heat. Stir in flour and seasonings until it all turns smooth, then gradually whisk in milk. Bring it to a boil while stirring constantly. Keep cooking and stirring for 1-2 minutes or until thickened. Stir in 1 cup of cheddar cheese and cream cheese until they've melted.

  3. Remove the pan from the heat and stir in eggs. Add the macaroni and toss it to coat. Spoon about 2 tablespoons of the macaroni mixture into prepared mini-muffin cups and sprinkle the remaining cheddar cheese on top.

  4. Bake everything for 8-10 minutes or until they turn golden brown. Let them cool in the pans for 5 minutes before serving.
