Ingredients
  1. 1 Lemon
  2. 1/3 cup Sugar
  3. 2 cups Flour (additional amount needed for dusting)
  4. 1 cup Oats (2 tbsp. - additional amount needed for other component)
  5. 2 1/2 tsp. Baking Powder
  6. 1/2 tsp. Salt
  7. 1 1/3 cups Cream (1 tbsp. - addtional for egg wash component)
  8. 1 tbsp. Honey
  9. 1 cup Blueberries (frozen)
  10. 1 Egg (yolk)
Instructions
  1. Place a race in upper third level in oven, preheat to 400 degrees.
  2. Finely grate 1 lemon with microplane into a large bowl (set lemon aside for later use).
  3. Add 1/3 cup sugar and mix with fingertips, squishing mixture until reaching a sandy texture.
  4. Add 2 cups flour, 2 1/2 tsp. baking powder, 1 cup oats, and 1/2 tsp salt; whisk to combine mix.
  5. In a medium bowl, combine cream and honey with whisk.
  6. Slowly drizzle cream mixture into flour mix while stirring with fork to hydrate dry mix.
  7. Stop mixing when few dry spots form.
  8. Add 1 cup blueberries, folding mixture with rubber spatula until blueberries are coated.
  9. Stop mixing once dough is sticky.
  10. Dust countertop and hands with flour then pour scone mix, patting into a one inch-thick square.
  11. In a small bowl mix 1 egg yolk with 1 tbsp. of cream.
  12. Use a pastry brush to spread all across surface of dough.
  13. Spread remaining amount of 2 tbsp. oats and 2 tbsp. sugar over egg wash.
  14. Using metal bench scraper or knife cut into 4 sections, then cutting diagonally for 8 triangles.
  15. On a large rimmed baking sheet (lined with parchment paper) lay triangles, spacing evenly.
  16. Place in the oven on the upper rack until scone tops are lightly golden for 15-20 minutes.
  17. Once bottom of scones are golden brown, pull from oven and cool scones on baking sheet.
  18. Serve warm and enjoy!
