Ingredients

  • 1 cup basmati rice
  • 1/4 cup coffee beans
  • 1 medium-sized cinnamon stick
  • 3 Medjool dates
  • 4 cardamom pods
  • 1 tablespoon cacao nibs
  • kosher salt
  • 4 cups water
  • 1 tablespoon maple syrup

Instructions

  1. Blend the rice, coffee beans, and cacao nibs together until in small pieces.
  2. Break a cinnamon stick and tear up the dates. Add to the blender along with cardamom pods, salt, and water.
  3. Refrigerate overnight.
  4. Blend again until smooth. Strain to remove the large pieces.
  5. Stir in maple syrup.
  6. Serve over ice.
