Brown Butter Caramel Blondies are Pockets of Sweetness

Browned Butter Caramel Blondies

These fudgy brownies are a perfect combo of sweet and salty.

Ingredients

Caramel

  • 1 1/2 cups granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 3 tbsp unsalted butter softened
  • 1/4 tsp salt

Blondies

  • baking spray with flour
  • 1 1/2 cups unsalted butter
  • 4 large eggs
  • 2 1/2 cups packed light brown sugar
  • 1 tsp vanilla extract
  • 3 1/2 cups flour all-purposed
  • 2 tsp baking powder
  • 1 tsp salt
  • 3/4 cup walnuts chopped
  • 1 semisweet chocolate bar chopped

Instructions

  1. First, the Caramel: Bring granulated sugar, corn syrup, and water to a boil in a medium saucepan on medium-high heat. Boil it (no touching!) until the mixture turns amber in color, about 10 minutes. Take it off the heat and carefully stir in cream, butter, and salt until it turns smooth. Let it cool until it's slightly thickened, about 30 minutes.

  2. Now for the important part, the Blondies: Preheat the oven to 350°F. Coat a 13- x 9-inch baking pan with baking spray and flour. Melt the butter in a medium saucepan over medium heat, giving it an occasional swirl, until the butter browns and has a nutty aroma, about 10 minutes. Transfer the butter to a large bowl and it cool slightly, about 30 minutes. Whisk eggs, brown sugar, and vanilla into the brown butter until it turns shiny, about 30 seconds. Stir together flour, baking powder, and salt in a separate bowl until combined. Gradually add the flour mixture, a 1⁄2 cup of the walnuts, and 2 ounces of the chocolate to the brown butter-egg mixture, and give the whole thing a stir until it's combined. Spoon half of the batter into the prepared pan, and bake that sucker for 10 minutes.

  3. Remove the pan from oven and drizzle the blondie with 1 cup of cooled caramel. Spoon the remaining batter over the top and sprinkle it with the remaining 1⁄4 cup walnuts and 2 ounces chocolate. Put it back in the oven and resume baking at 350°F until the mixture is golden and set. Should take about 25 minutes. Let it cool completely in the pan, about an hour. Slice into 32 bars, and drizzle 'em with the remaining Caramel just before serving.
