Roasted Squash with Thyme and Dates
This side dish will have you feeling like the heart eye emoji.
Ingredients
- 3 small acorn squash about 3 lb.
- 12 dates pitted and quartered
- 4 garlic cloves crushed
- ½ bunch thyme
- ¼ cup olive oil
- 2 tablespoons virgin coconut oil
- Kosher salt and freshly ground black pepper
- Flaky sea salt
Instructions

Preheat oven to 425 degrees.

Scrub and cut the acorn squash into wedges.

Toss squash, olive oil, salt, garlic, coconut oil, thyme, and pepper.

Roast for 40-45 minutes until caramelized. Add the dates, toss, and roast for an additional 12 minutes or until everything is tender.
