Coronation chicken – the name itself brings images of royalty and crowns to your head. While it may sound like a fancy roasted chicken recipe that would be served in a fancy banquet hall, coronation chicken is actually a curried chicken salad – best served for picnics and sandwiches!

This recipe was invented in honor the coronation of the current ruler of the United Kingdom, Queen Elizabeth II. It was first made by chef Rosemary Hume, and combined Indian spices with what was commonly found in London after the World Wars and great depression.

The Indian spices help to cut through the bland and creamy chicken flavors to create a wonderful vibrant flavor! While the fact that this is a curried chicken recipe may make it appear to be nothing more that simple chicken salad with curry powder, its secret lies in its multiple spices.

Because there are multiple spices involved, this gives the chicken much more flavor and body than a typical chicken salad. This makes it perfect for any and all salads to serve with, as well as a traditional chicken salad sandwich.
