Beet Lentil Dip
Serve this dairy-free pink bite hummus for your next party appetizer.

Ingredients
- 1 pkg cooked beets drained and chopped
- 1/2 cup canned lentils rinsed and drained
- 1/2 cup chopped walnuts
- 1 tbsp prepared horseradish
- 2 tbsp plain yogurt
- 1 tbsp fresh dill chopped
- 1 scallion chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil extra virgin
Instructions

Place everything except the oil in a food processor and run it all until it's well blended. While the machine is running, pour oil through the feed tube until it's completely incorporated. Feel free to adjust the taste and seasoning to your preference.
