Decadent, No-Bake Pie for Twix Lovers

Who doesn't love Twixes? This delicious, no-bake pie tastes just like your favorite candy bar!

Ingredients

For the crust

  • 2 1/2 cups crushed shortbread cookies
  • 6 tbsp butter melted
  • 1 tbsp sugar
  • pinch of salt

For the caramel

  • 1 1/3 cup sugar
  • 3 tbsp corn syrup
  • 2 tsp vanilla
  • 1/4 cup water
  • 2/3 cup heavy cream
  • 3 tbsp sour cream

For ganache

  • 1 1/2 cup chocolate chips
  • 3/4 cup heavy cream
  • flaky sea salt for garnish

Instructions

  1. In a big bowl, combine cookies, butter, sugar, and salt and mix until the butter is fully incorporated. Press the mixture into a pie dish to make a crust and set aside.

  2. In a medium saucepan over medium heat, combine sugar, corn syrup, vanilla, and water. Bring the pan contents to a boil and cook, without stirring, until a candy thermometer reads 340°. Take the pan off the heat and whisk in heavy cream and sour cream. Refrigerate until cool, about 3-4 hours.

  3. Place chocolate chips in a medium heat-proof bowl. In a small sauce pan over medium heat, heat cream until it starts to simmer. Pour the chocolate over the cream and let it sit for 5 minutes. Whisk until smooth.
