Decorate Your Pie with the Perfect Italian Meringue

Ingredients

  • 1 cup granulated sugar
  • 1/3 cup water
  • 4 large egg whites at room temperature
  • 1/2 tsp cream of tartar or lemon juice

Instructions

  1. Combine sugar and water in a heavy-bottomed saucepan. Cook on medium-high while stirring constantly until the sugar is dissolved and the mixture comes to a boil. As soon as it starts boiling, stop stirring, and carefully insert a candy thermometer. You're ready for action when it reaches 240°F.

  2. While the sugar mixture cooks, beat together the egg whites and cream of tartar in an electric stand mixer's bowl on medium speed until soft peaks form. When the sugar mixture has reached the target temperature, slowly drizzle into the egg whites while the mixer is running on medium speed. Increase the speed to medium-high and continue beating until stiff peaks form. All done! Put it on your favorite cakes and pies. Or just eat it! I won't judge you.
