Deliciously Spicy Nashville Hot Chicken Bake

Nashville Hot Chicken Bake

An easy chicken dish to give your weeknights a little kick!

Ingredients

  • 1/3 cup chicken stock
  • 1 tbsp pickle juice from jarred dill pickle chips
  • 1/2 tsp sweet paprika
  • 1/4 tsp garlic powder
  • 3 tbsp Louisiana-style hot sauce divided
  • 3 tbsp brown sugar divided
  • 2 tbsp olive oil
  • 2 lb boneless, skinless chicken breast cut in 3/4-in cubes
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 tbsp flour all-purpose
  • 4 thick white bread slices cut into 1-in cubes
  • 4 tbsp unsalted butter divided
  • 1/4 cup dill pickle chips quatered

Instructions

  1. Preheat your oven to 375°F. Whisk together chicken stock, pickle juice, paprika, garlic powder, and 2 tablespoons each of the hot sauce and brown sugar in a medium bowl and reserve. Heat the oil in a large skillet on medium-high heat. Sprinkle the chicken with salt and pepper, and add it to hot skillet. Let it cook undisturbed for 3 minutes, then flip it over and let it cook an additional 2 minutes. Transfer the chicken to an 8-inch square baking dish. 

  2. Whisk flour into the drippings in the skillet. Cook while whisking constantly for a minute. Whisk the reserved chicken stock mixture into skillet and continue cooking and whisking for 2 minutes, scraping any brown bits from the bottom of the skillet. Pour the stock mixture over the chicken and give it a toss to coat. 

  3. Microwave 3 tablespoons of butter in a microwave-safe bowl. Add the bread cubes to the butter and toss 'em to coat. Gently place the coated bread cubes evenly over chicken (careful not to push them into the sauce). Cover the chicken and bake it in your oven for 10 minutes. Take the cover off and continue baking for about 15 minutes. It should be golden, crisp and bubbly around the sides.

  4. While casserole does its thing in the oven, microwave the remaining tablespoons of hot sauce, brown sugar, and butter in a microwave-safe bowl in 30-second intervals until the sugar is dissolved. Make sure to whisk the mixture after each interval.

  5. Sprinkle the finished casserole with chopped pickles, and drizzle it with the hot sauce mixture.
