- 2 pounds chicken thighs boneless, skinless
- 8 cups chicken stock
- 1 cup long-grain rice
- 3 small dried red chiles such as Thai or chile de arbol
- 1 3" piece ginger, thinly sliced
- 2 garlic cloves pressed
- 1 1/2 teaspoons kosher salt
Place the chicken, rice, ginger, garlic, chiles, and stock in the slow cooker base.
Cover and cook for 8 hours on low.
Remove ginger and chiles. Top with whatever your heart desires.
