Ingredients

  • 1 large head of broccoli
  • 1 pound snap peas
  • 1 cup whole milk yogurt
  • 1 cup chopped mixed herbs
  • 1 cup cooked grain of your choice
  • 2 small cucumbers cut into half moon shapes
  • 4 eggs cloves garlic
  • pumpkin seeds topping
  • avocado topping
  • salt
  • pepper

Instructions

  1. Preheat the oven to 375 degrees.
  2. Spread the broccoli on a baking sheet and toss with olive oil, salt, and pepper for 15-20 minutes.
  3. Bring water in a medium sized saucepan to a boil. Add your eggs and boil for 7 minutes. Remove.
  4. Then, add snap peas to the saucepan. Boil for 1-2 minutes.
  5. Add the yogurt, garlic, herbs, and seasonings to a food processor and process until smooth and creamy.
  6. Toss in 1/4 of the green goddess dressing into the cooked grains. Season with salt and pepper.
  7. Mix the broccoli, snap peas, mini cucumbers, snap peas, and olive oil together in a bowl.
  8. Spoon the grains on the bottom of a bowl. Top with the greens, avocado, egg, herbs, pumpkin seeds, and more dressing.
  9. Serve and enjoy! 😀
