Coconut Sticky Rice
It's like taking a vacation without ever leaving your kitchen.
Ingredients
- sticky rice 1 lb.
- 2 cans coconut milk 13.5 oz.
- 1 cup granulated sugar
- 3 tablespoons kosher salt
Instructions

Rinse the rice 2-5 times then let soak overnight in cold water.

In a saucepan, bring sugar, salt, and coconut milk to a boil. Reduce to simmer and let cook for 10 minutes.

Remove from heat.

Bring a pot of water to boil with a steamer attachment fitted over.

Drain rice through a cheesecloth, squeezing to remove excess liquid.

Place the rice in cheesecloth bundle in the steamer and cook for 30 minutes.

Put cooked rice in a large bowl and mix with some of the sweetened coconut milk. Add just enough liquid to cover the rice and stir.

Let sit for 30-45 minutes so the rice continues to absorb the liquid.
