Fried Zucchini Straws are Impossible to Stop Eating

Fried Zucchini Straws

You know how you know you've got a good finger food? After each one, you say "just one more" until the plate's empty.

Ingredients

  • 2 cups flour all-purpose
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1 tbsp salt
  • 4 large eggs lightly beaten
  • 4 cups Japanese-style breadcrumbs
  • 1/2 tsp dried oregano
  • 1/4 tsp freshly ground black pepper
  • 2 medium zucchini cut into 1/4-inch-thick strips
  • canola oil
  • 1 cup Parmesan cheese grated

Instructions

  1. Mix together the 2 cups of flour, paprika, garlic powder, and 1 tsp. salt in a shallow dish. Whisk together the eggs and the 3 Tbsp. water in a separate dish.

  2. Process the breadcrumbs in a food processor until they're finely ground, then combine them with 4 Tbsp. flour, oregano, pepper, and remaining 2 Tsp. salt in a third shallow dish.

  3. Dredge the zucchini in the flour mixture in batches, then dip them in the egg mixture, and dredge them in the breadcrumb mixture.

  4. Heat 2 inches of oil in a Dutch oven over medium heat to 325°. Fry the prepped zucchini in batches until they're golden. Let them drain on a wire rack over paper towels, then sprinkle them with Parmesan cheese.
