Ginger-and-Garlic Asian Turkey Lettuce Wraps for a Quick-Fix Dinner

Crispy Ginger-and-Garlic Asian Turkey Lettuce Wraps

Ingredients

  • 1/2 cup carrots finely chopped
  • 1/2 cup water
  • 1 pkg lean ground turkey
  • 1 cup shiitake mushrooms chopped
  • 1 can water chestnuts drained and chopped
  • 3 garlic cloves minced
  • 2 tbsp fresh ginger minced
  • 1/3 cup teriyaki sauce
  • 3 tbsp creamy peanut butter
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1/4 cup hoisin sauce
  • 1/2 cup green onions sliced
  • 1 head iceberg lettuce separated into leaves

Instructions

  1. Cook the carrots and 1/2 cup water in a large nonstick skillet on high heat for 3 to 5 minutes while stirring occasionally. You're ready for action when the carrots are softened and the water is evaporated. Remove everything from the skillet.

  2. Reduce the heat to medium. Cook turkey in skillet about 5 minutes. Keep stirring until the turkey is crumbled and loses its pink. Add carrots, mushrooms, and next 8 ingredients. Turn up the heat to medium-high, and cook, stirring constantly for 4 minutes. Add green onions and keep cooking and stirring for 1 minute. Spoon mixture evenly onto fresh lettuce leaves and roll up. Serve with hoisin sauce, if desired.
