Ingredients
- 1/2 cup carrots finely chopped
- 1/2 cup water
- 1 pkg lean ground turkey
- 1 cup shiitake mushrooms chopped
- 1 can water chestnuts drained and chopped
- 3 garlic cloves minced
- 2 tbsp fresh ginger minced
- 1/3 cup teriyaki sauce
- 3 tbsp creamy peanut butter
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1/4 cup hoisin sauce
- 1/2 cup green onions sliced
- 1 head iceberg lettuce separated into leaves
Instructions
-
Cook the carrots and 1/2 cup water in a large nonstick skillet on high heat for 3 to 5 minutes while stirring occasionally. You're ready for action when the carrots are softened and the water is evaporated. Remove everything from the skillet.
-
Reduce the heat to medium. Cook turkey in skillet about 5 minutes. Keep stirring until the turkey is crumbled and loses its pink. Add carrots, mushrooms, and next 8 ingredients. Turn up the heat to medium-high, and cook, stirring constantly for 4 minutes. Add green onions and keep cooking and stirring for 1 minute. Spoon mixture evenly onto fresh lettuce leaves and roll up. Serve with hoisin sauce, if desired.
