Grilled Salmon with Tomato Avocado Salsa

Ingredients
- 2 cups cubed avocado
- 1 cup halved yellow cherry tomatoes
- 2 tbsp fresh cilantro chopped
- 1/2 tsp serrano chile chopped
- 1 1/2 tbsp sliced shallot
- 1 tsp fresh lime juice
- 1 tsp salt divided
- 3/4 tsp freshly ground black pepper divided
- 1 tbsp olive oil
- 4 skin-on salmon fillets

Crank the grill up to medium-high (about 450°F). Combine avocado, tomatoes, cilantro, serrano, and shallot in a medium bowl. In a separate small bowl, whisk together lime juice, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Drizzle that over the avocado mixture, and stir to coat.

Brush olive oil on both sides of the salmon and sprinkle it with the remaining 3/4 teaspoon salt and remaining 1/2 teaspoon pepper.

Place the salmon, skin side down, on the grill. Cook that thing, about 3 minutes per side, flipping once until salmon is opaque and cooked through. Serve the salmon topped with the salsa from step 1.
