Grilled Soy-Glazed Pork Chops
Grilling pork chops is sure to bring plenty of friends to the backyard BBQ, so make sure you make enough!

  1. 4 (1 1/2-in.-thick) bone-in pork chops, about 4 lb. total
  2. 1 1/2 teaspoons kosher salt
  3. 1/2 teaspoon freshly ground pepper
  4. 1/4 cup soy sauce
  5. 1 tablespoon rice wine vinegar
  6. 1 tablespoon fresh lime juice (from about 1/2 lime)
  7. 1 teaspoon light brown sugar, packed
  8. 1/4 teaspoon sriracha, optional
  1. Make a fire in a charcoal grill (about 375°F to 400°F) or preheat a gas grill to medium. Season both sides of the chops evenly with salt and pepper. Let rest at room temperature for 20 minutes.
  2. In a small bowl or measuring cup, mix together the soy sauce, vinegar, lime juice, brown sugar, and sriracha, if using. Place the chops directly over the coals and cook, covered, for 3 minutes. Turn and brush with the soy mixture, cover, and cook an additional 3 minutes. Continue to turn the chops and brush with the soy mixture every 3 minutes until cooked through, about 18 to 21 minutes total, or until chops reach an internal temperature of 150°F (closest to the bone). Remove from heat, brush once more, and let rest 10 minutes before serving.
