Paleo Meatballs

Meatballs are great with pasta and cabbage and whatever, but sometimes, you just wanna have a big ol' mug of meatballs on their own. No shame in it, meatballs are tasty.

Ingredients

The Meatballs

  • 1 1/2 lb. ground beef
  • 1/4 c. freshly chopped parsley plus more for garnish
  • 1 large egg
  • 2 garlic cloves minced
  • 1 tsp. salt
  • 1/2 tsp. crushed red pepper flakes

The Sauce

  • 1 28-oz. can crushed tomatoes
  • 1 6-oz. can tomato paste
  • 1/4 yellow onion chopped finely
  • 2 tsp. dried oregano
  • 1 garlic clove minced
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. First, the meatballs: In a large bowl, mix together the beef, parsley, egg, garlic, salt, and red pepper flakes. Form into 24 meatballs and place into a slow cooker. Remember to wash your hands before and after handling raw ground meat!

  2. Second, the sauce: In another large bowl, mix crushed tomatoes, tomato paste, onion, oregano, and garlic. Season with salt and pepper and pour it all over the meatballs. Cover and slow cook on low for 5 to 5 1/2 hours, or until meatballs are cooked through. Garnish with parsley and serve. Remember to use a fork. Don't, like, try to eat them with your hands.
