  1. Hickory wood chips
  2. 2 tablespoons dried rosemary
  3. 2 tablespoons paprika
  4. 2 tablespoons pepper
  5. 2 tablespoons dried garlic flakes
  6. 1 teaspoon salt 1 (7-pound) untrimmed beef brisket
  7. Barbecue sauce
  8. Hamburger buns
  9. Pickles
  10. Garnish: fresh rosemary sprigs
  1. Soak wood chips in water for at least 30 minutes.
  2. Prepare charcoal fire in smoker; let burn 15 to 20 minutes. (Ideal temperature for your smoker is 225°.)
  3. Combine rosemary and next 4 ingredients; rub on brisket.
  4. Drain wood chips, and place on coals. Place water pan in smoker; add water to depth of fill line. Place brisket on lower food rack; cover with smoker lid.
  5. Cook 8 hours or until meat thermometer inserted into thickest portion registers 195°. Slice and serve with barbecue sauce, buns, and pickles. Garnish, if desired.
