Pumpkin Protein Pancakes
High protein, pumpkin and cinnamon flavored pancakes.
- 2 eggs
- 1/2 cup pumpkin puree
- 1 tbsp ground oatmeal
- 1/2 tspn ground cinnamon
- 1 tbsp coconut sugar
- coconut oil
In a mixing bowl, combine the eggs, pumpkin puree, oatmeal, cinnamon, and coconut sugar and whisk well.
Heat a tbsp of coconut oil in a pan on medium-high heat and cook pancakes till brown on both sides.
Serve with your favorite syrup.
