Ingredients

  • 3 pounds chicken thighs boneless, skinless
  • 2 large sweet potatoes unpeeled, cut into 1" cubes (about 2 pounds)
  • 1 jar salsa verde about 2 cups
  • 2 cups low-sodium chicken broth
  • 2 teaspoons ground cumin
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 cans low-sodium pinto beans drained, rinsed

Instructions

  1. Place all the ingredients in the slow cooker base.
  2. Cover and cook for 4 hours on high or 4 hours on low.
  3. Serve and top with whatever your heart desires.
