Salmon with Chimichurri Sauce

Ingredients
Salmon
- 1 1/2 lb fresh salmon fillet
- kosher salt
- ground black pepper
Chimichurri
- 1 cup fresh cilantro tightly bunched
- 1 cup fresh parsley tightly bunched
- 2 green onions
- 1 clove garlic
- 1/2 cup extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tbsp fresh lemon juice
- 1/2 tspn oregano
- 1/4 tspn kosher salt
- ground black pepper
Instructions

Preheat your oven to 450F.

Sprinkle fillet with kosher salt and black pepper. Place on parchment-lined baking sheet.

Bake the fillet for about 10 minutes or until flaky.

Chimichurri: Slice tops off of the green onions. Using a blender, blend all the chimichurri ingredients until smooth.

Drizzle chimichurri sauce over the salmon and serve with potatoes.
