Juicy Sweet and Sour Chicken is a Weeknight Winner

Sweet and Sour Chicken

Save a few bucks and skip the take-out. You can make delicious sweet and sour chicken right at home!

Ingredients

  • 2 large egg whites
  • 4 tsp cornstarch divided
  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 6 tbsp unsalted ketchup
  • 1/4 cup water
  • 3 tbsp cider vinegar
  • 2 tbsp brown sugar
  • 1 1/2 tbsp low-sodium soy sauce
  • 2 tbsp canola oil divided
  • red bell pepper cut into 1-inch pieces
  • 1 1/2 cups fresh pineapple chunks
  • 2 tsp grated fresh ginger
  • 3 green onions cut into 1-inch pieces
  • 3/8 tsp salt

Instructions

  1. Combine the egg whites with 1 tablespoon of cornstarch in a large bowl, stirring with a whisk. Add the chicken to bowl and toss to coat.

  2. Combine the remaining teaspoon of cornstarch with ketchup and the next 4 ingredients (through soy sauce) in a bowl, stirring with a whisk.

  3. Heat a big nonstick skillet over medium-high heat. Add 1 tablespoon of oil to the pan and swirl around to coat. Add bell pepper to pan and cook for 2 minutes, stirring frequently. Add pineapple, ginger, and onions to pan and continue cooking for another 2 minutes, stirring occasionally. Transfer bell pepper mixture to a plate.

  4. Add the remaining tablespoon of oil to the pan. Add the chicken mixture, allowing any excess egg white mixture to drip back into the bowl. Stir-fry the mixture for 6 minutes or until the chicken is browned and done. Add the ketchup mixture and bell pepper mixture to pan. Bring the whole thing to a simmer and let it do its thing for 1 minute or until slightly thickened. Sprinkle with salt and serve immediately.
