Leftover Hack – Mashed Potato Waffles

I’ve said this once, and I’ll say it until everyone agrees with me: waffles are the best breakfast food ever. They combine the best of both textural worlds: the crispy outside and the fluffy inside, alternated by those delicious squares that allow this amazing separation and combination.

No matter the occasion, waffles are always appropriate, especially at breakfast. I wish we could say the same about leftover mashed potatoes – they are delicious when first made, but sad and cold afterwards.

If you try to heat them up, you get dried potatoes! Sure, you could add milk, but that just reduces the original potato flavor! turn your sad leftovers into the best brunch ever with this recipe for mashed potato waffles.
