Quinoa Fried Rice

Put that leftover quinoa to work!

Ingredients

  • 1 tbsp sesame oil
  • 1 1/2 cups cooked quinoa
  • 1/2 cup carrot chopped
  • 1/2 cup edamame
  • 2 cloves garlic crushed
  • 2 eggs
  • 2 tbsp soy sauce
  • 1/2 tspn pepper
  • 1 green onion chopped

Instructions

  1. Heat sesame oil in a pan over medium-high heat.

  2. Add the quinoa and cook for 2-3 minutes.

  3. Add the carrot, edamame, and garlic and mix well.

  4. Create a hole in the middle and crack the eggs in the middle and scramble before mixing into the quinoa.

  5. Add the soy sauce and cook for 1-2 minutes. Finish by mixing in the pepper and green onion before serving.
