Egg Roll in a Bowl
Add some brown rice and your favorite takeout snack is transformed into a hearty, nutritious meal.
- 1 lb ground chicken breast
- 3 cups coleslaw mix
- 3 stalks green onion
- 5 tablespoons coconut aminos
- 1 1/2 tablespoons grated ginger
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- ½ tablespoon grated garlic
Heat up the olive oil in a large skillet over medium high heat.
Add the ground chicken and cook for 3-5 minutes, or until it is golden brown and good through.
Thinly slice the green onion and add about 3/4 of it into the pan. Reserve some for the garnish.
Sautee the ginger, garlic, and coconut aminos, stirring until fragrant.
Now, add the shredded carrots, cabbage, and sesame oil. Cook until flavors are infused and tender.
