Ingredients

  • 2 cups granulated sugar
  • 2 cups water
  • 4 cups packed fresh mint leaves
  • 1 tbsp lemon zest plus 1 cup fresh juice divided
  • 1 tbsp lime zest plus 1 cup fresh juice divided
  • 1 1/2 cups bourbon
  • 6 fresh mint sprigs

Instructions

  1. Bring sugar and water to a boil in a small saucepan over medium-high heat while occasionally stirring. When it starts boiling, stir constantly until the sugar dissolves. Take the pan off the heat, and add mint leaves, lemon zest, and lime zest. Gently press on the leaves with a spoon to let their oil out. Let the pan stand for 10 minutes.

  2. Pour the mint mixture through a fine wire-mesh strainer into a bowl, and dump any solids that come out.. Let it cool completely, about 20 minutes.

  3. Pour the cooled liquid into the bowl of an electric ice-cream maker. Make the ice cream according to the manufacturer’s instructions.

  4. Scoop about 3/4 cup of your shiny new mint sorbet into each of 6 rocks glasses (or sorbet cups, if you have 'em). Top each with 1/4 cup of bourbon and garnish each with mint sprigs.
