Chocolate Mint Cookies

Yes, they taste like Thin Mints.

  • 1 1/2 cup all purpose flour
  • 1 cup granulated sugar
  • 3/4 cup cocoa powder
  • 3/4 cup butter
  • 1 large egg
  • 1 1/4 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon peppermint extract
  • 1/8 teaspoon salt
  • semi sweet chocolate 14 oz


  1. Preheat oven to 350 degrees.
  2. In a bowl, mix flour, baking powder, salt, and cocoa powder together.
  3. Next, whisk butter and sugar together until fluffy.
  4. Crack in the egg, pour in the vanilla and peppermint extracts and beat until smooth.
  5. Slowly whisk the flour mixture into this, folding until it forms a dough.
  6. Separate into two balls and refrigerate for an hour.
  7. Roll out the dough and cut into circles.
  8. Bake for 8 minutes.
  9. Melt semisweet chocolate and mix in another 1/4 teaspoon of peppermint extract until well-incorporated.
  10. Dip the cookies into the chocolate, coating both sides.
  11. Chill until the chocolate hardens.
  12. Serve and enjoy! 😀
