One Pot Cream of Mushroom Soup

Hot and hearty soup crammed fulla' mushrooms.

Ingredients

  • 2 tbsp butter
  • 1 cup onion chopped
  • 2 garlic cloves minced
  • 1 cup white mushrooms chopped
  • 1 cup cremini mushrooms chopped
  • 1 cup shiitake mushrooms chopped
  • 1 tspn salt
  • 1 tspn pepper
  • 2 tbsp flour
  • 1/4 cup white wine
  • 4 cups veggie broth
  • 1/3 cup heavy cream

Instructions

  1. Melt butter in a sauce pan over medium high heat and cook the onion until tender. Add the garlic cloves and stir.

  2. Add in the mushrooms, salt, and pepper and sautee until the mushrooms become tender.

  3. Sprinkle in the flour and mix well to create a rue. Pour in the white wine and stir.

  4. Add in the vegetable broth and bring to a simmer. Cook for 15 minutes.

  5. Add the heavy cream and stir. Use a hand blender to blend soup to preferred consistency.
