Refreshing Springtime Pasta Primavera

Springtime Shrimp Pasta

Ingredients

  • short pasta 12 oz.
  • 1 bag frozen broccoli florets 10 oz.
  • green beans 6 oz. trimmed
  • large shrimp 8 oz., peeled, deveined, tails left on
  • 1 pint cherry tomatoes sliced in half
  • 1 cup frozen green peas
  • 3/4 cup finely grated Parmesan plus more for serving
  • 1/4 cup coarsely chopped basil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves thinly sliced
  • 2 1/2 teaspoons kosher salt
  • 1 teaspoon finely grated lemon zest
  • 3/4 teaspoon freshly ground black pepper
  • Red pepper flakes for serving; optional

Instructions

  1. Bring salted water to boil in a wide saucepan. Add the pasta, garlic cloves, and pepper.
  2. Cover and cook for 7 minutes. Now add frozen broccoli and green beans, cooking for 3 more minutes.
  3. Next is to add the shrimp, frozen peas, cherry tomatoes, and butter. Mix well and cover again. Cook for 3 minutes then remove from the heat.
  4. Sprinkle over lemon zest then Parmesan. Mix well again.
  5. Serve and enjoy! 😀
