Coffee Flour Brownies

Rich, fudgy and, here's the fun part, gluten-free.

  • 1 pkg fudge brownie mix such as Betty Crocker
  • 1/2 cup canola oil
  • 1/4 cup water
  • 1/4 cup coffee flour
  • 2 large eggs
  • 3 cups coffee ice cream


  1. Crank the oven up to preheat at 325°F. Stir together brownie mix, water, oil, flour, and eggs in a medium bowl until it's all well combined. Pour the batter into a greased 8-inch square baking dish. Bake that sucker until you can stick a pick in and pull it out clean. Should take between 45 and 50 minutes.

  2. Let brownies stand at least 15 minutes after they're done baking. Cut 'em into 9 squares and top each one with 1/3 cup of the coffee ice cream.
