Silky Cauliflower Soup

Nothing says fall like this cauliflower soup that is perfect for the upcoming holidays.

Ingredients

  • 2 tbsp olive oil
  • 1 cup dice onion
  • 1 tbsp minced garlic
  • 3 cup washed and chopped cauliflower
  • 4 cups veg stock
  • 1 sprig thyme
  • 1 may leaf
  • 1 c heavy creme

Instructions

  1. Fry the onion and garlic in the olive oil in a large pot.

  2. Add the cauliflower, stock, thyme, and bay leaf ot the pot and bring to a boil.

  3. Remove the thyme and bay leaf.

  4. Use an immersion blender to blend the soup together.

  5. Add the heavy cream and stir until well mixed.

  6. Garnish with olive oil and black pepper.

  7. Serve and enjoy!
