Ingredients

  • 3/4 lb lean ground beef
  • 1/2 lb ground pork sausage
  • 1/2 small white onion chopped
  • 1/2 medium green bell pepper chopped
  • 1 can tomato sauce
  • 1/3 cup ketchup
  • 1/4 cup water
  • 3 tbsp light brown sugar
  • 2 tbsp flour all-purpose
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp yellow mustard
  • 2 tbsp chili powder
  • 2 tsp Worcestershire sauce
  • 3/4 tsp salt
  • 1 can diced green chiles
  • 4 oz Oaxana cheese shredded
  • 2 1/2 oz Monterey Jack cheese shredded
  • large corn chips such as Fritos Scoops

Instructions

  1. Prep the broiler with an oven rack 8 inches from the heat.

  2. Cook the beef, sausage, onion, and bell pepper in a medium skillet over medium-high heat while stirring constantly to crumble. Continue until the beef and sausage are cooked through and lightly browned, about 10 minutes. Drain the mixture and return it to the skillet.

  3. Stir together tomato sauce, ketchup, water, brown sugar, flour, vinegar, mustard, chili powder, Worcestershire sauce, and salt in a medium bowl. Yes, all of it. Pour that mess over the beef mixture, and stir to combine. Cover the skillet and turn the heat down to medium-low. Simmer, stirring occasionally, for 20 minutes, then stir in the green chiles.

  4. Transfer the mixture to a 2-quart baking dish or cast-iron skillet. Top it evenly with cheeses. Broil the dish/skillet in the prepped oven until the cheese is golden and bubbly, 3 to 5 minutes. Serve with corn chips.
