Somewhere Over The Rainbow, There’s Popcorn

Rainbow Kettle Corn

A fun way to enjoy home made kettle popped corn.

Ingredients

  • 12 tbsp sugar
  • red gel food coloring
  • orange gel food coloring
  • yellow gel food coloring
  • green gel food coloring
  • blue gel food coloring
  • purple gel food coloring
  • 6 tspn coconut oil
  • 12 tbsp white popcorn kernels
  • 1 1/2 tspn kosher salt

Instructions

  1. Line parchment paper on a baking pan.

  2. Divide sugar evenly in 6 small bowls.

  3. Dye each bowl of sugar by with 1-2 drops of a food coloring. Stir each bowl until the sugars are sandy.

  4. Add 1 teaspoon of coconut oil in a medium nonstick pan with a lid over medium-high heat. Once the pan is hot enough for kernels to pop, reduce the heat to medium and add 2 tablespoons of popcorn kernels and 1 entire bowl of colored sugar. Cover the pan and shake to mix. Shake the pan constantly so that the sugar doesn’t burn. Once the popcorn is all popped, remove from heat and pour the popcorn onto the baking sheet.

  5. Evenly sprinkle about ¼ teaspoon salt over the popcorn.

  6. Combine all of the colored popcorn in a large bowl and toss to mix the colors evenly.
