Cheesy Chorizo Sheet Pan Frittata
Try saying "Frittata" over and over while you make this. It'll completely lose its meaning after a few minutes.
- 1 lb Chorizo
- 1 cup Poblano Pepper Chopped
- 1 Onion Chopped
- 1 cup Black Beans
- 1/2 cup Roasted Red Peppers
- 18 Eggs
- 1 tspn Salt
- 1 tspn Black Pepper
- 1 cup Mexican Cheese Blend
- 1/4 cup Cilantro Chopped
Combine the chorizo, poblano pepper, and onion in a pan and cook on medium-high heat until chorizo is cooked through. Drain grease.
Add black beans and mix well. Evenly lay out the cooked chorizo and beans on a greased sheet-pan.
In a mixing bowl, combine the eggs, salt, and black pepper and mix well. Then fold in the cheese and cilantro and pour over chorizo.
Bake for 10-12 minutes at 350 degrees Fahrenheit. Serve warm.
