Cheesy Chorizo Sheet Pan Frittata

Ingredients

  • 1 lb Chorizo
  • 1 cup Poblano Pepper Chopped
  • 1 Onion Chopped
  • 1 cup Black Beans
  • 1/2 cup Roasted Red Peppers
  • 18 Eggs
  • 1 tspn Salt
  • 1 tspn Black Pepper
  • 1 cup Mexican Cheese Blend
  • 1/4 cup Cilantro Chopped

Instructions

  1. Combine the chorizo, poblano pepper, and onion in a pan and cook on medium-high heat until chorizo is cooked through. Drain grease.

  2. Add black beans and mix well. Evenly lay out the cooked chorizo and beans on a greased sheet-pan.

  3. In a mixing bowl, combine the eggs, salt, and black pepper and mix well. Then fold in the cheese and cilantro and pour over chorizo.

  4. Bake for 10-12 minutes at 350 degrees Fahrenheit. Serve warm.
