Sausage Meatball Heroes
Villainous hunger won't stand a chance when confronted by this super sandwich!
- 1 lb spicy Italian pork sausage casings removed
- 2 large eggs lightly beaten
- 1/2 cup Italian style breadcrumbs
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 tbsp olive oil
- 3 garlic cloves chopped
- 1 can tomatoes crushed
- 1 Italian bread loaf halved lengthwise and toasted
- 6 oz low-moisture mozzarella cheese sliced
- 1/2 cup fresh basil leaves
Preheat the oven to 475°F. Gently mix sausage, eggs, bread crumbs, ½ teaspoon of the salt, and ¼ teaspoon of the pepper in a medium bowl with your hands until it's all combined. Form the mixture into 12 1½-inch balls and place on a foil-lined rimmed baking sheet. Bake in the oven until it's cooked through.
In the meantime, heat the oil in a medium skillet over medium. Add the garlic and cook, stirring constantly, until fragrant. Stir in tomatoes and remaining ½ teaspoon salt and ¼ teaspoon pepper. Reduce heat and simmer until slightly thickened.
Add the meatballs to the sauce and toss 'em to coat. Move oven rack 6 inches from the heat and increase the setting to broil.
Place the bottom half of the bread, cut side up, on a baking sheet. Top with meatballs, sauce, and cheese. Broil until cheese is melted, 2 to 3 minutes. Remove from oven and top with basil. Cover with top half of bread and cut into 4 pieces.
