Thai Chicken-Stuffed Sweet Potato

Ingredients
- 1 large sweet potato
- 1/2 cup shredded rotisseire chicken breast
- 1 tbsp bottled Thai peanut sauce plus more for garnish
- 1 tbsp fresh cilantro chopped
- 1 scallion sliced
- 1/2 red Fresno chile finely sliced
- 1 tbsp peanuts chopped
Instructions

Pierce the sweet potato with a fork a few times, then put it on a microwavable plate. Hit it on high for 5 minutes or until it becomes tender. While the potato cooks, toss together chicken and peanut sauce in a small bowl.

Slice the prepped sweet potato open, and top with your chicken mixture, as well as cilantro, scallion, and Fresno chile. Drizzle with some extra peanut sauce, and sprinkle with peanuts.
