Loaded Endive Bites
Homemade croutons elevate this appetizer to another level.

Ingredients
- 2 large endives
- 2 slices sourdough bread
- ¼ cup plus 2 Tbsp. extra-virgin olive oil divided, plus more for drizzling
- ½ tsp. kosher salt divided
- 1 celery stalk
- Freshly ground black pepper
- ½ lemon
- 1 3- oz. piece hard blue cheese
Instructions

Rip bread into bite sized pieces.

Cut the ends off the endives. Remove the large leaves and set on a plate. Reserve the smaller ones.

Heat a skillet over medium with olive oil. Add in bread pieces and cook 3-5 minutes. Remove from pan and salt.

Dice celery into small cubes.

Mix croutons with oil, celery, salt, and pepper. in a bowl. Toss to combine.

Spoon this into endive cups. Top with blue cheese crumbles.
