Ingredients

  • 2 large endives
  • 2 slices sourdough bread
  • ¼ cup plus 2 Tbsp. extra-virgin olive oil divided, plus more for drizzling
  • ½ tsp. kosher salt divided
  • 1 celery stalk
  • Freshly ground black pepper
  • ½ lemon
  • 1 3- oz. piece hard blue cheese

Instructions

  1. Rip bread into bite sized pieces.
  2. Cut the ends off the endives. Remove the large leaves and set on a plate. Reserve the smaller ones.
  3. Heat a skillet over medium with olive oil. Add in bread pieces and cook 3-5 minutes. Remove from pan and salt.
  4. Dice celery into small cubes.
  5. Mix croutons with oil, celery, salt, and pepper. in a bowl. Toss to combine.
  6. Spoon this into endive cups. Top with blue cheese crumbles.
  7. Serve and enjoy! 😀
