Aquafaba sounds like a fancy water filtration system, or bottled water that you’d find in the “gourmet” section of an overpriced supermarket. In reality, it’s an amazing yet overlooked ingredient that most people have no idea about. So what is it? Aquafaba is basically the water you drain out of a can of chickpeas to make your hummus.
It’s the viscous, translucent gloppy stuff that you can only get from soaking legumes such as chickpeas and kidney beans for an extended period of time. While it may not look pretty, it’s the perfect substitute for egg whites due to the similar way it whips up in texture and (lack of) flavor. This makes it the perfect solution for vegans, vegetarians, or those that hate eggs. Try it in your meringues, or in this case, your eggless whisky sour!
