Breakfast Baked Potato
A complete breakfast with bacon and eggs baked into a single potato.
- 1 potato
- 2 tbsp shredded cheese
- 1 cooked bacon crushed
- 1 egg
- 1/2 tbsp chive chopped
Using a fork, poke a couple holes into the potato and then wrap with a wet paper towel. Microwave 4-6 minutes on both sides.
Slice 1/4 of the potato off lengthwise and scoop out the flesh out of the other 3/4 potato to create a bowl.
Place a layer of the shredded cheese across the potato, making sure the bottom of the potato bowl is covered too.
Crack an egg into the bowl and top with the bacon pieces and more cheese. Finally add the chives and bake for 15-20 minutes at 400 degrees Fahrenheit.
