These Cheesecake Bars Are So Pretty You May Not Want To Eat Them

Let’s be honest…you’re not going to go out of your way to make these gorgeous cheesecake bars just to stare at them and not eat them. But, they are so pretty it’s going to be fun to show them off. So instead of the whole not eating them thing, maybe you bring them to your next potluck or dinner party to show off your culinary skills because what’s better than a tasty dessert that looks just as amazing as it tastes?

Rainbow Vanilla Cheesecake Bars
It's not often someone makes a dessert they don't want to eat...but this fits the bill. Why? Because it's so beautiful and pretty...but you'll still want to eat it, because it's vanilla cheesecake of course.

FOR CRUST
  1. Cooking spray, for pan
  2. 9 graham crackers, crushed
  3. 6 tbsp. butter, melted
  4. 1/4 c. sugar
  5. 2 8-oz. blocks cream cheese, softened
FOR FILLING
  1. 1/4 c. sour cream
  2. 2/3 c. sugar
  3. 3 large eggs
  4. 1 tsp. pure vanilla extract
  5. 1 tsp. kosher salt
  6. Neon food dye in 6 colors
Instructions
  1. Preheat oven to 325° and grease an 8"-x-8” pan with cooking spray. Make crust: Add crushed graham crackers to a bowl with butter and sugar and mix until combined. Press tightly into prepared pan.
  2. Make filling: In a large bowl, beat together cream cheese, sour cream, and sugar until smooth. Add eggs, vanilla, and salt and beat until combined. Pour about half the cheesecake mixture into pan and set aside.
  3. Divide remaining mixture between six small bowls (or one bowl for each color you're using) and add a couple drops of food coloring to each bowl. Stir to combine, adjusting color as desired. Add spoonfuls of the dyed cheesecake mixture to the plain cheesecake mixture, alternating colors until you’ve used up the whole mixture. Swirl colors together with a butter knife.
  4. Bake until only slightly jiggly, about 40 minutes. Let cool slightly, then refrigerate until firm, 3 hours, or up to overnight.Slice into bars and serve.
