These Chips Combine Tortillas and Creamy Homemade Queso In One

The perfect snack for the big game or just a friendly get together. Crispy fried tortilla on the outside and a creamy melted queso on the inside.

Ingredients

  • 2 tbsp Butter
  • 1/2 Onion Chopped
  • 2 Jalepenos Chopped
  • 2 Garlic Cloves Minced
  • 1 tbsp Corn Starch
  • 12 oz Evaporated Milk
  • 3 cups Sharp Cheddar Cheese Shredded
  • 1 cup Flour
  • 2 eggs
  • 3 cups Crushed Tortilla Chips
  • Frying Oil

Instructions

  1. Melt butter in a pan on medium high heat and then add the onions. Cook until tender. Add the jalepenos and the garlic, stir and cook until jalepenos are tender.

  2. Add the corn starch and mix well. Add the evaporated milk, stir and bring to a simmer. Add in the cheddar cheese and continue to stir so the cheese is melted and incorporated into the creamy queso.

  3. Line a baking tray with wax or parchment paper and pour the queso and spread evenly. Freeze for 3 hours.

  4. Cut the frozen queso into small triangles, the shape of tortilla chips.

  5. Prepare a breading station with the flour, eggs and tortilla chips. Coat the queso triangles in the flour, then the eggs, and finally the tortilla chips.

  6. Deep fry the coated queso in the oil at 350 degrees Fahrenheit until the queso chips are golden brown on the outside. Drain excess oil and serve.
