Queso Chips
The perfect snack for the big game or just a friendly get together. Crispy fried tortilla on the outside and a creamy melted queso on the inside.
Ingredients
- 2 tbsp Butter
- 1/2 Onion Chopped
- 2 Jalepenos Chopped
- 2 Garlic Cloves Minced
- 1 tbsp Corn Starch
- 12 oz Evaporated Milk
- 3 cups Sharp Cheddar Cheese Shredded
- 1 cup Flour
- 2 eggs
- 3 cups Crushed Tortilla Chips
- Frying Oil
Instructions
-
Melt butter in a pan on medium high heat and then add the onions. Cook until tender. Add the jalepenos and the garlic, stir and cook until jalepenos are tender.
-
Add the corn starch and mix well. Add the evaporated milk, stir and bring to a simmer. Add in the cheddar cheese and continue to stir so the cheese is melted and incorporated into the creamy queso.
-
Line a baking tray with wax or parchment paper and pour the queso and spread evenly. Freeze for 3 hours.
-
Cut the frozen queso into small triangles, the shape of tortilla chips.
-
Prepare a breading station with the flour, eggs and tortilla chips. Coat the queso triangles in the flour, then the eggs, and finally the tortilla chips.
-
Deep fry the coated queso in the oil at 350 degrees Fahrenheit until the queso chips are golden brown on the outside. Drain excess oil and serve.
