Sweet Potato Chips
Sweet, crispy, and delicious.
Ingredients
- 4 medium sweet potatoes 2 lbs
- 1 cup whole Greek yogurt
- 1/4 cup cilantro leaves finely chopped
- 3 tablespoons olive oil
- 2 cloves garlic grated
- 1 tablespoon harissa
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- kosher salt to taste
- black pepper to taste
Instructions

Preheat oven to 450 degrees.

Scrub and slice your sweet potatoes into medium-sized slices.

Toss with olive oil, cumin, coriander, garlic, salt, and pepper until well-coated.

Place on baking sheet and roast, flipping halfway, for 25-30 minutes.

To make the dipping sauce: Mix yogurt, harissa, cilantro, lime juice, parsley, salt, and pepper.
